Best Mushrooms to Grow for Beginners, by Route
The best mushrooms to grow for beginners: oyster, lion's mane, shiitake and wine cap compared by route (kit, bucket, logs, bed) and how long each takes.
Four mushrooms have full guides here: oyster, lion’s mane, shiitake and wine cap. Which is easiest depends on the route you take as much as the species. No source we use ranks mushrooms by difficulty, so every “easiest” below is our reading of their numbers, and we say so. If the stages are new, start with our guide to growing mushrooms.
Time to first mushrooms, by route
| Mushroom | Beginner route | Wait | Guide |
|---|---|---|---|
| Oyster | Kit, or bucket or bag of straw | About 5 weeks on straw (Cornell); a kit skips colonization | Oyster |
| Lion’s mane | Kit or sawdust block | No extension timeline; 47 days in one Thai trial | Lion’s mane |
| Shiitake | Wide Range strain on hardwood logs | 6–18 months (Cornell, Maryland); about 12 (Wisconsin) | Shiitake |
| Wine cap | Shaded bed of wood chips or straw | 2–6 months (Cornell, NC State); Kentucky says two months to a year | Wine cap |
Our reading: which route is easiest
- A kit is the lowest effort, because someone else has done the colonization. See mushroom grow kits and the oyster kit page.
- A bucket or bag is the middle route for oyster, with heat-treated substrate and clean handling. Compare spawn and substrate first.
- Logs have simple steps and a long wait. Cornell calls the Wide Range strain the easiest for beginners. See growing mushrooms on logs.
- A garden bed needs no indoor space, and Cornell says an established wine cap patch can last several seasons.
Lion’s mane is thinly sourced: Cornell says it does best on sawdust, and our pages say plainly which figures come from one trial.
Wine cap and shiitake are the outdoor choices, and oyster and lion’s mane are the indoor ones. Cornell names oyster, shiitake and lion’s mane as the species most commonly grown indoors or in controlled environments.
Coming soon
Enoki, king oyster, maitake and pioppino appear above without guides. They are in our plan, and we will not guess at their timing before we have sources.
